CRUST. |
| One cup flour, 2
tablespoons lard, 3 tablespoons water, pinch of salt.

LEMON
PIE. |
|
The juice and grated rind of 1 lemon, yolks of 3 eggs, 1 cup
sugar, 1 heaping tablespoon of corn starch, 1 cup boiling
water.
Cook all together in double boiler until thick. Bake
crust and fill with cream. Cover top with meringue
crust and fill with cream. Cover top with meringue
made of the whites. Beat stiff with 3 tablespoons of
sugar and set in slow oven to brown.

NUT
PIE. |
|
One and one-half cups Karo syrup, 1 1/2 cups sugar, 1/2 cup
butter, 5 eggs, 1 tablespoon of corn starch, juice of 1
lemon.
This is sufficient for 2 pies. Beat all together and
pour in the unbaked shells and sprinkle generously with
pecans. The more the better.

PINEAPPLE
PIE. |
|
Small pineapple grated or 2 small cans of grated pineapple,
2 tablespoons of butter, 1 cup sweet cream, 1/2 cup sugar, 3
yolks of eggs.
Mix the above ingredients. Bake with under
crust. Beat the whites of 3 eggs stiff with scant 1/2
cup sugar. When pie is baked, cover with meringue and
brown. Very fine.

PUMPKIN
PIE. |
|
One cup mashed pumpkin, 1 egg, 1/2 cup sugar, 1/2 cup milk,
1 teaspoon cinnamon, 1/4 teaspoon grated nutmeg,.1/2
teaspoon each of ginger and salt.
Bake 1/2 hour in a moderate oven.

CARAMEL
PIE. |
|
One cup brown sugar, 1 cup milk, 2 eggs (yolks), pinch salt,
1 level tablespoon flour.
Cook until thick. Bake crust first; put in filling,
cover with meringue made of the 2 whites and return to oven
a few minutes.

MINCE
MEAT. |
|
Two packages large, or 3 small, currants; 2 packages seeded
raisins, 2 1/2 cups meat, 2 1/2 cups suet, 2 1/2 cups
apples, 4 cups sugar, citron, lemon, orange peel, 1/2 pound;
nutmeg, 2 only; 2 teaspoons cinnamon; brandy and
whiskey. Can put fruit juice or grape juice. Not
to be cooked.
