PEPPER
NUTS. |
|
Four eggs, 1 pound sugar, 1 pound flour, grated rind of 1/2
lemon, 1/2 grated nutmeg, 3 teaspoons cinnamon, 1/2 teaspoon
cloves, 1 pinch pepper.
Stir sugar, whole eggs and spices 1/2 hour; add flour, mix
well and roll out 1/2-inch thick then cut with round tube,
size of a nickel, put on tins for 24 hours then turn them
over, moisten with drop of wine or brandy and bake in slow
oven. This will make about 135 nuts.

Flavor with lemon or vanilla and press through pastry bag ni
the form of S. Bake in moderately hot oven.

|
Rub 4 hardboiled yolks through a sieve, add 1/2 pound of
butter, 1/2 pound of flour, 2 ounces finely grated almonds
and 2 ounces sugar.
Work all together into a dough. Mark into long strips
and lay in pans in the form of a bretzel. Cover top
with beaten whites and sugar and bake in moderate oven.

One and a half cups sugar, 1 1/2 cups seeded raisins
chopped, 1 pound English walnuts chopped, 1 cup butter, 3
eggs, 1/2 cup warm water, 1 teaspoon soda, 3 cups flour, 1
teaspoon vanilla.
Cream butter and sugar; add eggs beaten light; add water and
fruit floured. Drop in lumps on buttered tins and bake
in brisk oven.

KRANZE. |
| Three-fourths pound
of butter, 1/2 pound sugar, yolks of 3 eggs, 1 pound flour.
Cream butter and sugar, add
yolks and stir thoroughly. Take small piece of dough
at a time, roll with hands, shape into rings; cover with
whites of eggs beaten stiff and dip each ring into a mixture
of chopped almonds, cinnamon and sugar.

One-half pound brown sugar, 1/2 pound black walnuts
(picked), 2 eggs beaten thoroughly, 5 heaping tablespoons
flour, 1-2 teaspoon Dr. Price's
baking powder.

One can shredded cocoanut, whites of 3 eggs beaten stiff
with sugar.
Drop in pan and bake slowly.
