Green Parrot Vegetable and Side Dish Recipes
 

HARVARD BEETS

3 c. cooked diced beets   1/4 c. water
3 tb. cornstarch 6 tb. brown sugar
1/2 c. vinegar 3 tb. melted butter
 

Combine sugar, cornstarch, butter, water, and vinegar.  Cook over hot water until smooth and thick.  Season to taste.  Add beets, and heat thoroughly.  Serve at once.
