Beat
egg yolks, sugar and flour
together with a little of the
pineapple juice. Combine
vinegar and remaining pineapple
juice and bring to a boil.
When liquid comes to a boil
remove from fire and add egg
mixture. Beat well, return
to fire and cook again for a few
minutes. Beat well and set
aside to cool. Add a
little of this dressing to
whipped cream, according to
taste, and serve on pears,
pineapple, or mixed fruit. |
