Green Parrot Inn Salads


2 qts. pineapple juice   1 pt. vinegar
1 tsp. salt 6 egg yolks
3 c. sugar 3 c. flour
1/4 c. butter Whipped cream

Beat egg yolks, sugar and flour together with a little of the pineapple juice.  Combine vinegar and remaining pineapple juice and bring to a boil.  When liquid comes to a boil remove from fire and add egg mixture.  Beat well, return to fire and cook again for a few minutes.  Beat well and set aside to cool.  Add a little of this dressing to whipped cream, according to taste, and serve on pears, pineapple, or mixed fruit.
