Green Parrot Inn Salads
 

TOMATO ASPIC RING

2-1/2 c. tomato juice   1/2 c. sweet relish
1 stalk celery, diced 1/2 tsp. salt
2 tb. gelatin 2 c. creamed cottage cheese
1/2 c. cold water 1 tb. chopped chives
1 tb. grated onion  
 

Combine tomato juice and celery and cook over low heat ten minutes.  When cool, add onion, salt, relish, cottage cheese and chives, and mix well.  Add gelatin, which has been softened in cold water.  Pour into ring mold and chill until set.
