Pie and Pie Crust Recipes from the Famous Green Parrot
 

PINEAPPLE PIE

1 c. grated pineapple (drained)   1 c. water and pineapple juice
6 tb. cornstarch 1/2 lemon (juice)
1 c. sugar 2 egg whites (beaten)
 

Mix all ingredients except egg whites, and cook until thick and clear.  Cool.  Stir in stiffly beaten egg whites, and pour into baked pie shell.  Serve with whipped cream.
