Green Parrot Inn Cake Recipes
 

SWEET GERMAN CHOCOLATE CAKE

1 c. shortening (butter)   1 c. buttermilk
2 c. sugar 1 bar German sweet choc-
2-1/2 c. sifted cake flour     olate, dissolved in
1 tsp. soda 1/2 c. boiling water
4 eggs, separated 1 tsp. vanilla
 

Cream shortening, sugar.  Beat egg yolks and add to creamed shortening and sugar.  Add 3/4 cup milk alternately with flour, preferably one tablespoon at a time.  Dissolve soda in remaining 1/4 cup milk, and add alternatively with remaining flour.  Add chocolate and boiling water while still hot.  Lastly fold in beaten egg whites.  Bake in layers at 350 F. until done (about 25 minutes).

NOTE:  This is a large recipe and will make three large layers.

FILLING AND FROSTING

1 c. sugar   1 tsp. vanilla
3 egg yolks 1 c. coconut
1 stick butter 1 c. chopped pecans
1 large can Pet milk  
Beat egg yolks with sugar.  Add butter and milk and cook in double boiler or over low flame, stirring constantly until thick.  Remove from fire.  Add vanilla, coconut and pecans.  Spread filling between layers and on top.
